One Pot Enchilada

One Pot Enchilada (4 servings)

1 box of couscous

1 lb of Ground beef or turkey

1 onion

2 cloves of garlic

1 can of black or pinto beans (drained)

1 can of enchilada sauce

1 can of corn

2 cups spinach

Toppings (optional but make the dish that much better!)

Shredded cheese

Greek yogurt

Green onion

Instructions

  1. Cook couscous (as directed on package)

  2. Dice the onion and mince the garlic

  3. Heat a pot over high heat and add oil

  4. Put ground meat into the pot and begin browning, 1⁄2 way through browning add in onions and garlic

  5. Add enchilada sauce, beans, and corn and let cook for 10 min

  6. Add in 2 cups of spinach and cook till wilted.

  7. In a bowl put couscous and top with enchilada mixture and if desired greek yogurt, cheese & green onion
