Tempeh Fajitas

Tempeh Fajitas (4 servings)

1 package tempe

1 can black beans

1 tablespoon oil

2 onions (any color)

4 garlic cloves

2 red peppers

2 portobello mushrooms

1 teaspoon garlic powder

1 teaspoon cumin

salt & pepper to taste

Corn or flour tortillas

Topping (per serving)

2 fl. ounces greek yogurt/ taco

1/2 avocado

green onion

cilantro

Lemon

salsa

Instructions

  1. Slice tempe onions, red pepper, mushrooms & garlic

  2. Add oil into a large skillet, heat & add in tempe, onions, garlic, mushroom and red pepper

  3. Season with salt, pepper, garlic powder, cumin and red pepper if desired

  4. Heat beans in separate pot

  5. Place mixture in a tortilla and top with green onion, cilantro, greek yogurt & lemon.
