Tempeh Fajitas
Tempeh Fajitas (4 servings)
1 package tempe
1 can black beans
1 tablespoon oil
2 onions (any color)
4 garlic cloves
2 red peppers
2 portobello mushrooms
1 teaspoon garlic powder
1 teaspoon cumin
salt & pepper to taste
Corn or flour tortillas
Topping (per serving)
2 fl. ounces greek yogurt/ taco
1/2 avocado
green onion
cilantro
Lemon
salsa
Instructions
Slice tempe onions, red pepper, mushrooms & garlic
Add oil into a large skillet, heat & add in tempe, onions, garlic, mushroom and red pepper
Season with salt, pepper, garlic powder, cumin and red pepper if desired
Heat beans in separate pot
Place mixture in a tortilla and top with green onion, cilantro, greek yogurt & lemon.
