Quick Salmon Bowl

Ingredients

  • 4 oz salmon filet

  • 1 tsp sesame oil I love the spicy sesame oil from Chosen Foods

  • Kosher salt & pepper

  • White rice the frozen kind from Trader Joe's is great for a quick meal

  • Mixed greens

  • Sesame ginger dressing Primal Kitchen has a great one!

  • Sliced cucumbers

  • Sesame seeds to top


Instructions

  1. Preheat oven to 400 degrees. Coat salmon with sesame oil, salt and pepper. Bake for 10-12 minutes or until cooked to your liking.

  2. Toss your greens in dressing then add cucumbers, rice and salmon. Top with sesame seeds and enjoy!
