Garlicky Spinach & Potato Frittata
Garlicky Spinach and Potato Frittata (7 servings)
2 cups egg Whites
6 eggs
2 large Potatoes
2 cups spinach
1 onion
8-10 sliced mushrooms
4 Garlic Cloves
3⁄4 cup shredded Cheddar Cheese
1 tablespoon butter
Instructions:
Preheat oven to 425 degrees
Cook Potatoes:
Fill a medium put with water, bring to a boil and add in whole russet potatoes
Done once fork tender and let cool
Slice potatoes ½ inch thick
Slice up onions & mushrooms and mince garlic
In a frying pan add 1 tablespoon of butter and add in onions, mushrooms, garlic and let cook for 5 min then add in spinach.
Let cool.
In a large bowl combine eggs and cool vegetables
Butter a large casserole dish and line the bottom with potatoes and pour in egg mixture
Top with cheese
Bake for 40 min or until the center jiggles.
