Garlicky Spinach & Potato Frittata

Garlicky Spinach and Potato Frittata (7 servings)

2 cups egg Whites

6 eggs

2 large Potatoes

2 cups spinach

1 onion

8-10 sliced mushrooms

4 Garlic Cloves

3⁄4 cup shredded Cheddar Cheese

1 tablespoon butter

Instructions:

  1. Preheat oven to 425 degrees

  2. Cook Potatoes:

    • Fill a medium put with water, bring to a boil and add in whole russet potatoes

    • Done once fork tender and let cool

    • Slice potatoes ½ inch thick

  3. Slice up onions & mushrooms and mince garlic

  4. In a frying pan add 1 tablespoon of butter and add in onions, mushrooms, garlic and let cook for 5 min then add in spinach. 

  5. Let cool.

  6. In a large bowl combine eggs and cool vegetables

  7. Butter a large casserole dish and line the bottom with potatoes and pour in egg mixture

  8. Top with cheese 

  9. Bake for 40 min or until the center jiggles.
