Roasted Chickpea Salad w/ Balsamic Dressing

Roasted Chickpea Salad w/ Balsamic Dressing (1 serving)

Roasted chickpeas

1 1/2 cup chickpeas (cooked and drained)

2 tablespoons olive oil

salt to taste

Salad

1 1/2 cups Romaine Lettuce

1⁄2 cup red pepper

5 cherry tomatoes, halved

1 tablespoon sunflower seeds or pepitas

1 tablespoon Feta

Salad Dressing

1⁄4 slice red onion

1 tablespoon olive oil oil

2 teaspoons apple cider vinegar

1 tablespoon Trader joes balsamic glaze or balsamic vinegar

Instructions

  1. Roast chickpeas

    • Preheat oven to 425 degrees

    • On a baking sheet spread out chickpeas, drizzle olive oil and season with salt.

    • Bake in oven until crisp (20-30min)

  2. Make dressing:

    • Slice red onion and put into a medium size bowl.

    • Add in oil, balsamic glaze, apple cider vinegar and salt & pepper

    • Let sit for 15 min

  3. Make Salad

    • Slice Romaine Lettuce, tomatoes & red pepper and put into the bowl containing the dressing

    • Top with chickpeas, sunflower seeds, feta & toss

Pro Tip: make meal prep all week by multiplying this recipe by 4 and tossing dressing in right before serving!
