Tofu & Veggie Stir Fry

Tofu & Veggie Stir Fry (4 servings)

1 package extra firm tofu

1 onion

3 cloves garlic

1 Thumb size piece of ginger ginger

1 cup broccoli

1 cup shredded carrot

2 heads of baby bok choy

Green onion (optional)

Cooked rice

Sauce/ Tofu marinade

1⁄4 cup soy sauce

2 tablespoons sesame oil

1 teaspoon honey

Red pepper (optional)

Instructions

  1. Press water out of tofu

  2. Make marinade by combining soy sauce, sesame oil, honey and red pepper

  3. Marinate tofu for 5 min- 2 hours

  4. Cook Rice

  5. Slice onion, broccoli & bok choy, grate carrots, and mince garlic & ginger

  6. Place a large skillet over high heat and add 1 tablespoon sesame oil. Cook tofu until browned on all sides ~ 5 min/side and remove from pan.

  7. On the same skillet add sesame oil and cook garlic and ginger until fragrant ~ 1-2 min

  8. Add the onion & cook for 2 min.

  9. Add in carrot & whites of the bok choy and cook for an additional 7-10 min. Add in greens of bok choy, tofu, and left over marinade and cook for an additional 2 min

  10. Place tofu and veggie mixture over rice, top with green onion and serve.
